In this paper, a procedure is presented to analyse a set of tables within the context of
sensory evaluation. To study the performance of judges, a metric is introduced in which the
optimality is realised for a fixed-effects model. This metric has the property to provide a
coherent evaluation of judges. The characterisation of products is given by an analysis of the
combined tables.

A hierarchy of models for analysing sensory data. Food Quality
and Preference, 6, 309-314.
To analyse sensory profile similarity data produced by different
assessors a three-level hierarchy of analysis is proposed
consisting of averaging the similarity matrices, weighted averaging
(i.e. STATIS, Lavit 1988), and differentially weighting (INDSCAL;
Carroll & Chang, 1970). The successive component computation
via deflation is proposed (which has been shown to be suboptimal,
Carroll & Chang, 1970). Seven 8x8 matrices describing the
similarities of yoghurts were analysed.
